Frittata For The Day-After Thanksgiving


This is the last Thanksgiving post. I just had to give you this recipe for those Thanksgiving leftovers. The best thing is that this will only take you 30 minutes to make.


Ingredients
PAM Original No-Stick Cooking Spray
1 can (14.5 oz each) Hunt's Diced Tomatoes with Basil, Garlic & Oregano, drained
1-1/2 cups chopped cooked turkey (1-1/2 cups = 8 oz)
1/2 cup leftover chopped zucchini or green beans
1 carton (16 oz each) Egg Beaters Original (16 oz = 2 cups)
1/2 teaspoon crushed red pepper, optional
1/4 cup fresh shredded Parmesan cheese (1/4 cup = 1 oz)

Directions

1. Preheat broiler. Spray medium nonstick skillet with ovenproof handle with cooking spray; heat over high heat. Add drained tomatoes, turkey and vegetable. Cook 3 minutes, or until heated through, stirring occasionally.
2. Pour Egg Beaters and red pepper, if desired, evenly over turkey mixture; reduce heat to medium-high. As edge begins to set, lift up using a spatula to let as much liquid Egg Beater flow underneath until edge is set, about 2 minutes (top and center will still be very loose). Sprinkle cheese evenly over top.
3. Place skillet under broiler. Broil 4 minutes, or just until top is set. Cut into 6 wedges.
