Christmas Leftover Cranberry Sauce Recipe

 Cranberry sauce is a Christmas tradition. As a matter of fact Christmas and Thanksgiving is the only time a of people have cranberry sauce. Well maybe after you try this Chocolate Cranberry Mousse Pie that will change.

Ingredients:

  • 1 9" pie shell, baked and cooled
  • 1 cup vanilla milk chips
  • 2 cups heavy whipping cream
  • 1 cup semisweet chocolate chips
  • 1 tsp. grated orange peel
  • 1 cup whole berry cranberry sauce

Preparation:

Melt white chocolate chips with 1/2 cup whipping cream over very low heat, or in the microwave, about 2 minutes on medium power. Stir until smooth. Refrigerate about 1 hour or until cool. Melt semisweet chocolate chips with 2 Tbsp. of the cream over very low heat, or in the microwave, about 2 minutes on medium power. Stir until smooth. Spread over bottom of baked, cooled pie shell. Chill for 20 minutes until chocolate is set.
Beat the rest of the cream (1-1/4 cups plus 2 Tbsp.) until stiff. Beat cooled white chocolate-cream mixture and fold into stiffly beaten cream along with orange peel.
Layer the whipped cream mixture with the cranberry sauce over the chocolate layer in the pie shell. Pull knife gently through layers to marble. Cover well and refrigerate 6-8 hours until firm.

Leftover Christmas Pudding Recipe

Christmas pudding in itself is delicious, but if you have some leftover from your Christmas meal you just might want to do something a little different with it.

Well, this Christmas pudding muffins with sherry butter icing recipe is something different and something you're going to like.

INGREDIENTS

FOR THE MUFFINS

    1 egg
    75ml milk
    30g salted butter
    2 tbsp sherry, whisky or brandy
    125g leftover Christmas pudding
    125g plain flour
    1 tbsp baking powder
    1/2 tsp mixed spice
    75g caster sugar

FOR THE SHERRY BUTTER ICING

    125g sifted icing sugar
    50g salted butter, softened
    1-2 tbsp sweet sherry, whisky or brandy

METHOD

Preheat the oven to 350F or gas mark 4. Line the muffin tins with paper cases.

Whisk the egg in a bowl. Add the milk, melted butter, sherry and the Christmas pudding.

Sift the flour, baking powder and mixed spice into another bowl. Add the caster sugar and mix well. Make a well in the centre.

Add the wet ingredients and mix together until a soft batter forms. Spoon the mixture into the paper cases and bake in the oven for 20-25 minutes. Allow to cool on a wire rack.

While they are cooking, make the sherry butter icing.

Mix together the icing sugar and the butter. Add enough sherry, about 1 tbsp, to just soften the mixture and make it spreadable.

Once the muffins are cool, spread the icing over the top and serve.

A New Look At Ham As A Christmas Entree

Honey baked and glazed ham are both delicious Christmas entree traditions, but if you want something a bit different this Christmas you should try this Chipotle-Glazed Ham with Cherry Jicama Salsa.

Ingredients

Chipotle-Glazed Ham:
1 bone-in fully cooked spiral-cut ham, 8 to 9 pound
1 turkey-size cooking bag
1 (12-ounce) jar cherry preserves, high-quality
2 canned chipotle chile in adobo sauce, plus 1 tablespoon of the adobo sauce

Cherry-Jicama Salsa:
1 1/2 cups red onion, finely chopped
1 1/2 cups jicama, peeled and diced
1 cup dried cherries
1/2 cup apple cider vinegar
1/3 cup cilantro, chopped



Instructions

    For Chipotle-Glazed Ham: Set oven to 250°F (120°C). Remove ham from packaging; if it has a plastic disk over the bone, pull it off and throw it away. Lay the ham, cut-side down in a turkey-size cooking bag. Gather the bag up over the ham, pressing out all the air. Fasten with the enclosed tie. Trim excess plastic from above the tie. Using a small knife, make 6 half-inch slits around the top of the bag to allow steam to escape.
    Place the ham in a 13 x 9-inch baking dish. Bake for 80 to 90 minutes (roughly 10 minutes per pound), until the temperature near the bone reads 100°F (50°C) on an instant-read thermometer.
    In a food processor or blender, combine the cherry preserves, chipotle chile and its canning sauce. Process until smooth. Scoop out and set aside 1/2 cup of the glaze for seasoning the salsa.
    When the ham reaches 100°F (50°C), remove from oven, slit the bag and pull it out from under the ham, letting all the juices run into the pan. Tip the pan slightly and spoon off all but about 1/4 cup of the juices. Brush the glaze (except what you've reserved) over the top and sides of the ham.
    Return to the oven and bake for an additional 30 to 40 minutes, until the temperature near the bone reads 140°F (60°C) on an instant-read thermometer. If there is time, tent the foil and let rest for 15 minutes before serving.
    For Cherry-Jicama Salsa: In a large bowl, stir together the onion, jícama, cherries, vinegar and the 1/2 cup of reserved glaze. Taste and season with salt, usually about 1 1/2 teaspoons. Cover and refrigerate until ready to serve.
    When the ham is ready, stir the cilantro into the salsa and serve along with slices of ham.

Makes 10 to 14 (3-ounce) servings of ham; 3 1/2 cups salsa

A Christmas Crown Roast Of Pork

Here is a Crown Roast of Pork with Walnut-Rhubarb Stuffing thatyour family and friends will thank you for. You'll want to have the butcher cut and tie the crown roast for you and you'll bake the stuffing alongside in a separate casserole. This is part of a great Christmas meal.

Ingredients




8 to 9 pound crown roast of pork
Salt and ground black pepper, to taste

1 pound ground pork, cooked and crumbled
5 cups dry bread cubes
1 (14 1/2-ounce) can chicken broth
1/2 cup chopped onion
1/2 cup chopped celery
1 cup walnut halves, toasted
1 teaspoon salt
1/4 teaspoon ground cinnamon
1/4 teaspoon ground allspice
1/8 teaspoon ground black pepper
2 cups sliced fresh or frozen rhubarb, thawed
1/2 cup granulated sugar

Instructions

    Heat oven to 350°F (175°C)
    Generously season pork with salt and pepper; place in shallow roasting pan; roast for about 2 to 2 1/2 hours, until internal temperature, measured with a meat thermometer, is 150°F to 155°F (approximately 65°C). (About 18 to 20 minutes per pound.) Remove roast from oven. Let stand 15 minutes before slicing to serve with stuffing.
    Meanwhile, in large bowl thoroughly combine ground pork, bread cubes, broth, onion, celery, walnuts and seasonings; mix well.
    In medium saucepan, combine rhubarb and sugar; bring to a boil. Pour over stuffing mixture; mix lightly. Spoon into buttered 2-quart casserole. Cover, bake at 350°F (175°C) for 1 1/2 hours.

A Nice Little Christmas Brunch

Here is a nice little recipe that you can have for Christmas brunch.This holiday brunch casserole is bound to impress your guests.


Ingredients

  • 4 cups frozen shredded hash brown potatoes
  • 1 pound bulk pork sausage, cooked and drained
  • 1/2 pound bacon strips, cooked and crumbled
  • 1 medium green pepper, chopped
  • 2 cups (8 ounces) shredded cheddar cheese, divided
  • 1 green onion, chopped
  • 1 cup reduced-fat biscuit/baking mix
  • 1/2 teaspoon salt
  • 4 eggs
  • 3 cups 2% milk

Directions


  • In a large bowl, combine the hash browns, sausage, bacon, green pepper, 1 cup cheese and onion. Transfer to a greased 13-in. x 9-in. baking dish.
  • In another bowl, whisk the biscuit mix, salt, eggs and milk; pour over the top. Sprinkle with remaining cheese. Cover and refrigerate overnight.
  • Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 375° for 30-35 minutes or a knife inserted near the center comes out clean. Let stand for 10 minutes before cutting.

Christmas Eggnog Recipe

Eggnog is a Christmas tradition and this eggnog punch recipe is something that you'll be proud to serve at your next Christmas get together.

Ingredients

  • 4 cups half-and-half cream, divided
  • 6 eggs, lightly beaten
  • 1/2 cup sugar
  • 3 teaspoons vanilla extract
  • 1/2 teaspoon ground nutmeg
  • 4 cups whipping cream
  • 6 cups lemon-lime soda, chilled
  • 1 quart vanilla ice cream
  • 1/2 cup chopped maraschino cherries

Directions

  1. In a saucepan, combine 2 cups half-and-half cream, eggs and sugar. Cook and stir over medium heat until mixture reaches 160 degrees F or is thick enough to coat a metal spoon, about 9 minutes. Remove from the heat; stir in vanilla, nutmeg if desired and remaining half-and-half. Cover and refrigerate for at least 3 hours.
  2. Pour into a punch bowl. Stir in whipping cream and soda. Top with scoops of ice cream and sprinkle with cherries. Serve immediately.

Ingredients
  • 1 (9- by 13-inch) cake
  • Frosting
  • Candy for decoration, such as gumdrops, shoestring licorice, nonpareils, fruit leather, and gummy rings

  1. Bake your favorite cake recipe in a 9- by 13-inch pan, taking care to spread the batter evenly so that the top of the cake is level. Let the cake cool thoroughly, remove it from the pan, and cut it as shown in one of the diagrams. Assemble the cake on a platter, then frost and decorate it.

A Great Christmas Dessert Idea

 Here is a great recipe for a Christmas dessert. Kids and adults will love these snowman cupcakes. They are easy to make and something that you can give at any time of day.
 
Ingredients
  • Cooled cupcake (baked from your favorite recipe)
  • White icing
  • Large marshmallows
  • Waxed paper
  • Pretzel sticks
  • Decorators' gel
  • Orange slice candy
  • Junior Mints
  • Thin Mints
  • Fruit leather
Instructions
  1. Frost a cooled cupcake (baked from your favorite recipe) with white icing.
  2. Flatten a large marshmallow on waxed paper with the palm of your hand. Cut a second marshmallow in half horizontally, then stack the halves on the first marshmallow to form a torso and head.
  3. Push a thin pretzel stick down through the snowman (this will help him stand up), then set him on the cupcake.
  4. Use decorators' gel to create a mouth, eyes, and buttons, then add pretzel stick arms and a wedge cut from an orange slice candy for a nose.
  5. Accessorize with a candy hat (a Junior Mint secured to a Thin Mint with icing) and a fruit leather scarf.
